El d\u00eda m\u00e1s t\u00edpico para comer este plato es el Viernes Santo. <\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-6874a7e8 elementor-widget elementor-widget-heading\" data-id=\"6874a7e8\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">El origen<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-68eccaf elementor-widget elementor-widget-text-editor\" data-id=\"68eccaf\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>Existen muchas narraciones distintas sobre el origen de este plato. Una de ellas dice que, en la \u00e9poca colonial, los espa\u00f1oles trajeron a un chef franc\u00e9s a Ecuador para preparar un plato adecuado para la penitencia de la Semana Santa. Otra versi\u00f3n indica que una mujer llamada \u201cJuana\u201d cre\u00f3 este plato en un monasterio de Quito. Por esta raz\u00f3n, sol\u00edan llamarlo JUANESCA.   <\/p><p>No obstante, estudios sobre la gastronom\u00eda ecuatoriana han determinado que la Fanesca tiene sus or\u00edgenes en la \u00e9poca prehisp\u00e1nica. Hace m\u00e1s de 4.000 a\u00f1os se celebraban las \u201cFiestas del Sol\u201d, en las que se utilizaban todos los granos y legumbres t\u00edpicos del pa\u00eds. Ese fue el inicio de la Fanesca. Posteriormente, el plato fue perfeccionado con ingredientes de la cocina colonial.   <\/p><p>Durante la \u00e9poca de cosecha y el D\u00eda del Equinoccio, los pueblos ind\u00edgenas de la regi\u00f3n andina del Ecuador celebran el \u201cMuchuc Nina\u201d (El D\u00eda del Nuevo Fuego) cocinando los granos y legumbres frescos en ollas de barro. Esta tradici\u00f3n ind\u00edgena se fusion\u00f3 con las creencias religiosas de la Iglesia Cat\u00f3lica y con s\u00edmbolos tra\u00eddos por los espa\u00f1oles. El resultado fue una combinaci\u00f3n que se puede observar durante la <em>Semana Santa<\/em>, donde la muerte y pasi\u00f3n de Jesucristo, difundidas por los espa\u00f1oles, se integraron con el ritual ind\u00edgena del \u201cMuchuc Runa\u201d.
